Gentle mornings paired with a breakfast to match. Waking to a warming bowl of oats layered with the sweetness of vanilla for seasons when comfort is found in the simple.
Dried fruits infused with sweet spices, orange juice and golden maple syrup, this is one of our family's favourites for cosy, slow mornings.
3 cups dried fruit - whatever you prefer. I used dried apricots, blueberries, sultanas and prunes.
1 tsp cinnamon
1 tbsp maple syrup - more or less depending on how sweet you prefer yours.
2 1/2 cups cold water
juice of one orange
1 tsp vanilla paste
In a large saucepan place all ingredients and stir to combine and bring to the boil. Once boiled, turn the temperature down and simmer over low heat until the fruit is plump and the liquid is slightly syrupy. Spoon the warm fruit and syrup over porridge and store in an airtight container in the fridge.
I also like to add slivered almonds and honey with this compote to my porridge, and our kiddos also love eating this compote with coconut yoghurt for dessert,
